Dear Farm Members,
This week, among many things, we are grateful for escarole. Easily mistaken for a giant head of lettuce, this leafy green gem goes above and beyond - transcending lettuce not just in volume but with crisp texture and the delicious sharp flavor that graces all chicories (although you’ll find it’s much milder than radicchio). We love it in a sweet and citrusy salad, or, If bitter isn’t your thing, braised to perfection alongside white beans, good olive oil, and a dusting of parmesan. At a time when gratitude for abundance is front and center, escarole shines - humble, gracious, and completely magnificent. Enjoy!
