Dear Farm Members,

One of the biggest perks of being a farmer, is eating like a farmer. With constant access to the best ingredients you could ask for, it should be no secret that after a long day of hard work, we sit down and eat the kinds of meals that most folks only dream of (although in the summer, some of us do occasionally just eat half a watermelon and then fall asleep). Which brings me to reason #2 of our ‘five reasons why Community Supported Agriculture is awesome’ - you get to eat like a farmer! Each week we dream up a well-rounded box that offers equal parts consistency and variation. We intentionally grow the best-tasting vegetable varieties we can find, and make a point of experimenting with the new and unique. Because whether you’re sitting down to share a meal with friends, prepping a week of work lunches ahead of time, or feeding your kids, it feels incredibly good to cook with incredible produce. 

On top of that, eating incredible produce is also incredibly good for you. The vegetables we grow and harvest for your boxes each week are grown in a thriving, biodiverse environment in healthy soil, and picked at peak ripeness only shortly before making their way to you. As a result, they’re nutrient dense and packed full of the good stuff - vitamins, minerals, and antioxidants. 

As a farm, our hope is that you open your box each week and feel utterly and completely inspired. The food that we grow should be as special to you, the eaters, as it is to us.

RECIPES

Recipes may sometimes call for more or less of a certain item in your boxes, or an ingredient you might not have on hand. We encourage you to enjoy the creativity associated with eating locally and seasonally.

Your boxes this week contain some of the usual winter roots, along with an array of truly beautiful spring greens. The pea shoots, from our friends at Natural Trading Company, are so good they might as well be treasure. Whether you devour them fresh on top of a ‘ELS’ (extremely large salad) or blend them into a delicate pesto, they’ll make everything they touch taste like spring.

Vietnamese Spring Rolls with Crispy Tofu (Fill these up with sliced radishes, carrots, pea shoots, and cilantro!)
